Prepare garlic mayonnaise by combining mayonnaise, grated garlic, lemon juice, salt, and pepper in a bowl. Mix well and refrigerate until ready to use. Optional: substitute yogurt for a lower-calorie version.

Slice the onion thinly, make a horizontal cut, then dice finely while keeping the root intact to prevent waste.

Slice tomatoes thinly and set aside.

Separate and wash lettuce leaves, then shred them. Any lettuce variety works well.

Heat a large pan over high heat until smoking. Lightly spray with oil, then add beef mince and spread evenly, pressing down with a spatula. Keep on high heat for about 2 minutes to develop a crust without stirring.

Once a crust forms, season with salt and pepper, then add garlic powder, onion powder, cumin, coriander, smoked paprika, and oregano. Break up the meat while mixing in the spices, keeping larger chunks intact.

Add diced onion and mix through, cooking for about 2 minutes. The onions should retain some texture rather than fully soften.

Tear the cheese into pieces, add to the beef mixture, cover with a lid, and reduce heat to medium-low for about 1 minute to melt the cheese.

Remove the lid, turn off heat, and slowly mix until cheese is fully incorporated throughout the meat. The mixture should have melted cheese and a nice crust.

Warm the tortillas. Spread garlic mayonnaise down the center of each tortilla.

Divide the beef mixture evenly among the five tortillas, placing it over the mayonnaise.

Add tomato slices, lightly salt them, then top with shredded lettuce. Tip: If freezing, add lettuce and tomato fresh when reheating.

Roll the wraps tightly: fold the top over the filling, tuck in both sides firmly, then continue rolling until fully sealed. Repeat for all five wraps.

Store in meal prep containers, food-safe paper, or foil. Serve fresh, toasted, or reheat in a pan, air fryer, or oven for a crispy exterior.
