Classic Mexican Style Cheesecake (Pays de Queso)

Preheat the oven to 350°F. Place a baking dish filled halfway with water on the bottom of the oven to create steam and prevent the pie from cracking on top.

Add the galletas Marias (or graham crackers), sugar, and ground cinnamon to a blender and pulverize until finely ground.

Lightly grease a springform pan and line it with parchment paper. Pour the crushed cookies into the pan, mix in the melted butter, and combine thoroughly until the mixture resembles moist sand.

Use a flat tool to press the mixture firmly into the bottom and sides of the pan, creating an even crust.

Place the crust in the oven and leave it there while you prepare the filling.

Add the evaporated milk, condensed milk, room-temperature cream cheese, Mexican vanilla blend, salt, and fresh lime juice (from half a lime) to the blender and blend on low speed until completely combined.

Add the eggs one at a time, continuing to blend on low speed after each addition until all eggs are fully incorporated.

Place the springform pan on a baking sheet. Using a spatula, carefully pour the filling over the crust, breaking any air bubbles that form on the surface.

Bake the pie for 1 hour and 20 minutes until set.

After baking, open the oven door and let the pie cool in the oven for about 30 minutes, then remove and allow it to cool completely at room temperature. Refrigerate for at least 2 hours or overnight.

Once fully chilled, release the springform pan and slice. Decorate with strawberry glaze, fresh berries, or your favorite toppings before serving.
