1
Combine 1 tbsp sugar with 1 cup milk in a bowl, add 1 tsp instant yeast, mix well, and let rest for 10 minutes.
2
In a mixing bowl, combine 2¼ cups all-purpose flour and ½ tsp salt, and mix well.
3
Once the yeast mixture is ready, pour it into the flour, add 1 egg, and mix with a spatula until a rough dough forms. Cover and let rest for 10 minutes.
4
Prepare the burger sauce: mince 1 small garlic clove and combine in a bowl with 3 tbsp mayonnaise, 2 tbsp ketchup, 1 tsp mustard, ½ tsp paprika, a pinch of salt, a pinch of ground pepper, and the minced garlic. Mix well.
5
Add 1 tbsp vegetable oil to the dough, knead for 3 minutes, cover, and let rise for 45 minutes.
6
Prepare the patties: in a bowl, combine 1 lb ground beef, ½ tsp salt, and ½ tsp ground pepper. Mix well and divide into 4 equal portions.
7
Oil a cutting board, a spatula, and a 4-inch round mold. Shape each portion of beef into a patty using the mold.
8
Slice 2 small onions. In the same pan over medium heat, cook the smoked bacon slices until both sides are brown, then set aside.
9
In the same pan, add ½ tbsp vegetable oil and the sliced onions with a pinch of salt. Cook over medium heat for 3 minutes, stirring occasionally, until lightly golden. Set aside.
10
Heat the pan to high heat until it starts to smoke. Sear each patty for 30 seconds on each side to create a crust while keeping the juices inside. Remove from pan.
11
Once the dough has risen, place it on the board, press gently to release the gas, and divide into 4 equal portions. Shape each into a ball.
12
Sprinkle flour in a bowl to prevent sticking. Take one portion of dough, roll it out to about 6 inches in diameter, leaving the center slightly thicker, and place it in the bowl.
13
Layer the fillings: 1 slice cheddar cheese, 1 patty, 1 tsp burger sauce, some onions, 1 slice bacon cut in half, 2 slices of pickle, and another slice of cheddar cheese.
14
Fold the dough edges over the fillings to enclose them completely, pinching the edges firmly to seal everything inside.
15
Flip the burger and place it seam-side down on a baking tray lined with parchment paper. Let rest for 20 minutes to allow the dough to rise slightly.
16
Mix 1 egg yolk with ½ tbsp water to make an egg wash. Preheat the oven to 350°F using only the bottom heat.
17
Just before baking, brush the egg wash over the buns and sprinkle with sesame seeds. Bake for 18 minutes until golden.
18
Remove from the oven and let rest for 10 minutes before eating. Enjoy by biting into it whole rather than cutting it in half—this preserves all the flavors and juices inside.
