Coconut Curry Salmon with Boiled Dumplings and Steamed Vegetables

A quick weeknight dinner featuring salmon cooked in a coconut curry sauce, served with homemade boiled dumplings and steamed vegetables. Flavored with a fresh green seasoning blend, the entire dish comes together in approximately 30–45 minutes.

Prepare the green seasoning: Add peeled garlic, red and green bell peppers, pimento peppers if using, spring onions, red and white onions, celery, and parsley to a food processor. Pour in vegetable oil and blend until smooth. Set aside when done.

Cut the salmon fillet into three equal pieces. Rinse with lemon juice and cold water to remove any scales, then pat dry with paper towels.

Season the salmon pieces with oil, salt, black pepper, mixed herbs, all-purpose seasoning, paprika, and chilli flakes. Use your hands to massage and distribute the seasonings evenly. Set aside.

Make the dumpling dough: Combine 1–2 cups flour, a pinch of salt, and mixed herbs if desired. Gradually add cold water while mixing. Knead until the dough is firm and smooth. Let it rest briefly before shaping.

Prepare the vegetables: Wash the asparagus tips, tenderstem broccoli, and red bell pepper. Rinse with vinegar and cold water, then drain. Season with mixed herbs, all-purpose seasoning, and butter.

Divide the dough into small portions and roll into balls or your preferred dumpling shape. Bring salted water to a boil in a pot and add a drop of oil to prevent sticking. Add the dumplings, cover loosely (leaving lid slightly ajar to prevent boiling over), and cook until they float.

Cover the vegetables and steam on low heat for about 5 minutes until tender.

Heat butter and oil in a pan until melted. Carefully add the seasoned salmon pieces—use a non-stick pan if possible, or add them individually to a regular pan to prevent sticking. Cook for 6–8 minutes until cooked through.

Remove the cooked salmon from the pan. In the same pan, add the prepared green seasoning and sauté briefly. Season with all-purpose seasoning and curry powder, stirring well to combine.

Pour in the coconut milk and simmer on low heat for about 5 minutes. Return the cooked salmon to the sauce and cook for another 5 minutes to absorb the flavors. Cover and keep warm.

Verify that all components are cooked: the vegetables should be steamed for about 5 minutes, the dumplings should be fully cooked, and the salmon should have absorbed the sauce flavors. Plate the salmon, dumplings, and steamed vegetables together and serve.
