Preheat oven to 350°F. Add 13 sheets of crackers, 1/4 cup brown sugar, 3/4 tsp ground cinnamon, and a pinch of salt to a blender and blend until the crackers are finely pulverized.

Line a 9×9-inch cake pan with parchment paper. Transfer the cracker mixture to the pan, add 6 tbsp melted butter, and mix until all crumbs are wet. Press down evenly using the back of a cup or your hands.

Bake the crust in the oven for 10 minutes.

While the crust bakes, melt 3 tbsp butter in a pan over medium-low heat. Add the diced apples, 1/4 cup brown sugar, 1 tsp apple pie spice, 1 tsp ground cinnamon, a pinch of salt, and a few drops of lime juice. Mix well and cook for 5 minutes, then remove from heat and let cool.

In a bowl, combine 1 cup all-purpose flour, 2 packets of apples and cinnamon instant oats (or 3/4 cup regular oats), 2 tbsp brown sugar, and a pinch of salt. Add 6 tbsp melted butter and crumble together with your fingertips until all ingredients are coated.

In a bowl, beat 16 oz room-temperature cream cheese with 1/2 cup sugar until smooth and creamy. Add 2 tbsp sour cream, 2 tsp vanilla extract, and 2 eggs, then mix on low speed until fully combined.

Once the crust is baked and cooled, pour the cheesecake mixture on top and spread evenly.

Spread about half of the crisp topping over the cheesecake, distribute the cooled cinnamon apples evenly, then top with the remaining crisp topping.

Bake in the 350°F oven for 45–50 minutes until a toothpick inserted in the center comes out clean.

Allow the cheesecake to cool completely, then refrigerate for at least 6 hours or overnight.

Remove from the pan and cut into squares. Serve as is or drizzle with caramel sauce if desired.
