Peel the potatoes and cut them into large chunks. Larger pieces absorb less water, resulting in fluffier mashed potatoes.

Rinse the potatoes and place them in a large pot with plenty of water and a generous pinch of salt. This seasons the potatoes from the inside out.

Bring to a simmer and cook until the potatoes are tender, about 30 to 40 minutes depending on size. Drain and set aside.
