Prepare the marinade by mixing soy sauce, neutral oil, garlic, cumin, chipotle chili powder, smoked paprika, oregano, black pepper, and hot honey. Stir well until the honey is fully incorporated.

Place the skirt steak in a sealed bag and pour in the marinade. Remove air and seal the bag. Gently massage to ensure all pieces are evenly coated with marinade, then refrigerate for about 30 minutes.

Prep the vegetables by roughly chopping the onion into small dice. Chop the cilantro, lettuce, and slice the tomato. Make the jalapeño mayo by mixing mayo with the juice from pickled jalapeños and a pinch of salt.

Heat your grill to high temperature. Place the marinated steak on the hot grill and cook for a few minutes per side until beautiful grill marks form. Adjust heat as needed for thickness; ensure the interior stays relatively pink.

Transfer the cooked steak to a cutting board. First cut with the grain into thick slices, then rotate and cut across the grain into smaller pieces for easier eating.
