Prepare 3 slices of ginger, mince 2 cloves of garlic, cut 3 green onions into 2-inch sections (keeping stems and leafy parts separate), slice half an onion into large strips, gather beansprouts, and have fresh egg noodles ready.

Shell and rinse the shrimp, pat dry, then marinate with salt, a touch of sugar, white pepper powder, cornstarch, and a little water; mix well and finish by stirring in sesame oil.

Combine cornstarch and cold water, stirring until all the cornstarch is fully dissolved.

Bring a pot of water to a rolling boil, add the noodles and cook for 1 minute, then drain.

Heat oil in a pan over medium heat, add the drained noodles and spread evenly. Toss and pan-fry repeatedly, then flatten to form a cake and fry until the bottom is golden (about 2 minutes). Flip using a plate to help turn, working over a sink to avoid oil splashes, then fry the other side until golden.

Turn heat to medium-high, add salt and sugar to fresh oil in the pan, immediately add the onion and beansprouts and stir-fry for about 30 seconds. Add rice wine, toss quickly to release the alcohol, then remove everything from the pan.

Add sliced ginger to fresh oil and let it sizzle briefly to infuse flavor. Add the shrimp and spread out, pan-frying until both sides are golden brown. Add the green onion stems and minced garlic, stir-fry with the shrimp for about 30 seconds, then remove from the pan.

Reduce heat to medium-low, add oyster sauce, soy sauce, dark soy sauce, and a tiny bit of sugar to the pan and mix. Pour in the chicken broth and bring to a simmer. Slowly add the cornstarch-water mixture while stirring until the broth thickens into a glossy sauce.

Return the shrimp, onion, and beansprouts to the pan, add the green onion leafy parts and crushed black pepper, mix everything together, then pour the entire mixture over the crispy noodle cake.
