Slice the zucchini into very thin strips (about 2 mm thick) using a mandoline or vegetable peeler.

Place the zucchini slices in a bowl, sprinkle with salt, and let sit for about 15 minutes to draw out excess moisture.

Press the zucchini slices firmly to remove as much water as possible, then transfer to a clean bowl.

Add minced fresh parsley (if using), season with black pepper and dried oregano or herbes de Provence, and mix well. You can add a pinch of curry powder for extra flavor if desired.

Separate the egg whites from the yolks. Whip the egg whites until stiff peaks form.

Gently fold the egg yolks into the whipped egg whites, then fold in the flour, stirring gently to maintain the airy texture.

Press the zucchini slices one more time to remove any additional liquid. Dust lightly with flour, then fold in the egg white mixture, ensuring the foam coats each zucchini slice evenly.

Heat oil to 180°C (350°F). Using a spoon, gently place small portions of the zucchini batter into the hot oil, frying 2-3 at a time.

Fry for about 3 minutes, turning frequently, until golden brown and crispy on both sides. Drain on paper towels.
