1
Season the cleaned chicken drumsticks with oil, all-purpose seasoning, garlic powder, salt, black pepper, the two curry powders, and green seasoning. Set aside.
2
Mix together curry powder (about 1 tsp of each variety) and 1.5 cups of water in a cup, stirring with a fork until combined.
3
Heat oil in a pot, then add the curry water mixture and let it simmer for about 5 minutes.
4
Add the seasoned chicken pieces to the pot. Rinse the seasoning bowl with a little warm water and pour all remaining seasonings into the pot.
5
Cover the pot and cook on low to medium heat for 10 to 15 minutes, stirring occasionally to check on progress.
6
Halfway through cooking, add one whole scotch bonnet pepper, chopped carrot, and one small potato to the pot.
7
Continue cooking for another 20 minutes, until the total cooking time reaches 45 to 50 minutes.
8
Remove the scotch bonnet pepper, garnish with parsley, and serve with rice or pasta.
