Slice the eggplant into medium-thick slices—not too thick or thin—and soak them in water to prevent browning.

Spread the soaked eggplant slices on a wide plate, sprinkle turmeric, red chili powder and salt evenly, drizzle a little oil, and gently rub with your hands so every slice is coated.

Heat oil in a pan and shallow-fry the marinated eggplant slices on both sides until soft and lightly golden, which removes the raw flavor and enhances texture.

In a bowl, whisk together the yogurt and salt until smooth and silky.

Heat oil in another pan, add mustard seeds, cumin seeds and garlic, and sauté until the garlic becomes aromatic.

Add onion, curry leaves, green chili, dried red chili and asafoetida, and sauté until the onion turns soft.

Add the red chili powder and sauté for a few more seconds to release the spice flavors.

Pour the tempered spice mixture into the whisked yogurt and gently mix to combine.

Layer the fried eggplant slices in a serving bowl, pour some of the tempered yogurt mixture over, add another layer of eggplant, and top with the remaining yogurt mixture.
