Danube Waves Cake is a classic German multi-layered cake named after the German river Danube. The chocolate topping is decorated with fork waves resembling the river's waves. It combines cake layers, cherries, vanilla pudding buttercream filling, and a chocolate glaze with a rich, decadent taste.

Separate the eggs into whites and yolks. Whisk the egg whites with 3 tablespoons of sugar until foamy. Reserve the remaining sugar to mix with the yolks.

Mix the egg yolks with the remaining sugar and sunflower oil.

Mix the flour with baking powder, then gradually fold into the egg yolk mixture along with the water.

Gently fold the whipped egg whites into the batter to maintain a light and fluffy consistency.

Pour half the batter into prepared baking pans. Mix the remaining half with cocoa powder and milk to create a dark batter, then spread over the light layer.

Press the drained cherries into the dark batter.

Bake in a preheated oven at 180°C (350°F) for 25 minutes.

While the cake bakes, prepare the vanilla pudding by mixing the pudding powder with milk according to package directions. Cook, then cool completely with plastic wrap directly on the surface to prevent a skin from forming.

Once the cake has cooled, remove the baking pan rim and place the cake in a baking frame (or keep in the pan if it is tall enough).

Make the German buttercream: whip the room-temperature butter until creamy, then add the cooled vanilla pudding one tablespoon at a time, beating well after each addition.

Spread the buttercream evenly over the cake and refrigerate until firm.

Melt the dark chocolate with coconut oil over a double boiler or in short microwave bursts.

Pour the first layer of melted chocolate over the chilled buttercream and allow it to partially set in the refrigerator.

Pour a second thin layer of chocolate over the first layer and let it cool slightly until set but still pliable.

Use a fork to create wavy lines in the chocolate surface to create the characteristic Danube wave pattern.

Once the chocolate has fully set, dip a knife in hot water and use it to slice the cake cleanly without cracking the chocolate layer.
