Rinse the toor dal and moong dal thoroughly. Adding moong dal helps create a creamy, smooth texture in the final dish.

Transfer the dals to a pressure cooker, add turmeric, a little oil, and water. Pressure cook for about 5 whistles until the dals are fully softened.

Once cooked, mix the dal well until smooth and creamy, then set it aside.

In a separate pan, heat oil and ghee together — the ghee gives the dal a rich flavor and restaurant-style aroma.

Add mustard seeds, cumin seeds, and asafoetida. Once they start to crackle, add chilli, garlic, ginger, and curry leaves.

Cook these aromatics well as this tadka is the key to real flavor, then add onion and sauté until well cooked.

Make sure the onion is properly cooked or the dal may have a raw smell. Lower the heat and add the spice powders.
