This rich, creamy soup is loaded with grilled chicken, vegetables, and aromatics, traditionally served in a toasted bread bowl. A crispy homemade wonton seasoned to mimic nacho-cheese Doritos adds an unexpected textural contrast that elevates the dish.

Season the chicken breasts with salt, black pepper, dried thyme, and sage.

Grill the oiled chicken breasts on a hot grill for about 3-4 minutes per side until the internal temperature reaches 160°F.

Peel and cube the potatoes, then parboil them in salted boiling water until slightly softened; set aside.

Dice the onion and celery.

Melt butter in a large pot, add the onion and celery, and sauté for 3-4 minutes until softened.

Add minced garlic, fresh thyme, salt, and pepper, stirring constantly for 1 minute.

Sprinkle flour over the vegetables and stir to coat.

Gradually add the chicken broth while stirring constantly to prevent lumps from forming.
