1
Verify your oven temperature. Set the oven to 500°F and use an oven thermometer to confirm it actually reaches 500°F, as any significant deviation will affect the cooking outcome.
2
Prepare the dry rub by mixing together beef tallow, kosher salt, coarse ground black pepper, garlic powder, onion powder, Worcestershire sauce, and hot sauce in a bowl.
3
Put on food-safe gloves and rub the mixture evenly all over the prime rib, covering all sides and the fatty top generously.
4
Chop fresh rosemary and thyme and sprinkle them over the top of the roast.
5
Calculate cooking time by multiplying the weight of the roast in pounds by 5 minutes. Place the rubbed roast in the preheated 500°F oven and cook for this duration.
6
When the timer goes off, turn off the oven without opening the door. Leave the roast in the closed oven for exactly 2 hours without opening the door at any point.
7
For the creamed spinach, heat a pan and melt butter in it.
8
Add diced onion and cook for 4 to 5 minutes until softened.
9
Stir in 3 minced garlic cloves and cook until fragrant.
10
Add flour and stir for about 1 minute until the mixture becomes dry and sandy, forming the base of the sauce.
11
Pour in 1 cup of milk and add a pinch of fresh thyme.
12
Add 1 cup of heavy whipping cream and bring to a gentle simmer.
13
Stir in Parmesan cheese and season with salt and black pepper to taste.
14
Add the thawed, pressed-dry spinach and stir to combine, breaking up any clumps. Adjust consistency by adding more milk if too thick or letting it cook down if too thin.
15
Cook the spinach through during the roast's resting time, finishing with adjustments of salt, pepper, and Parmesan as needed.
16
After the 2-hour rest, remove the roast from the oven and turn it to admire the crust.
17
Cut and remove the three strings that held the roast together during cooking, then gently pull away the attached bones.
18
Slice into the roast to check the doneness and enjoy a bite of the perfectly cooked prime rib alongside the creamed spinach.
