Fill a Dutch oven or large pot with frying oil to a depth of about 1.5 inches. Attach a thermometer and heat to medium-high until the oil reaches 350°F.

Peel and core two large apples, then dice the flesh into small, uniform half-inch pieces.

Transfer the diced apples to a bowl. If desired, add the juice of half a lemon (about 3 tablespoons) and toss to combine. Set aside.

In a large bowl, whisk together the dry ingredients: 1.5 cups flour (or 180g), 3 tablespoons sugar, 2.5 teaspoons baking powder, 1 teaspoon salt, and 0.5 teaspoon cinnamon.

In a medium bowl, whisk together the wet ingredients: 0.75 cup whole milk, 2 large eggs, and 2 teaspoons vanilla extract.

Pour the wet mixture into the dry mixture and gently fold together with a spatula until just combined, with some streaks of flour still visible. Do not overmix.

Gently fold the prepared apples into the batter until evenly distributed.

Once the oil reaches 350°F, use a 1/4 cup scoop or two large spoons to portion the batter into similarly sized fritters and carefully place them in the hot oil. Fry 4-6 at a time and gently press them down with a spoon to increase surface area and crispiness.

Fry for about 2 minutes until the bottom is golden brown, then carefully flip and fry for another 2 minutes until golden all over.

Use a slotted spoon or spider strainer to carefully remove the fritters and place them on a prepared cooling rack lined with paper towels. This allows them to drain without steaming and stay crispy.

Repeat the frying process with the remaining batter, monitoring the oil temperature to keep it around 350°F.

Prepare the topping. For cinnamon sugar: mix 1 tablespoon cinnamon into 1 cup sugar. For vanilla glaze: combine 2 cups powdered sugar, 3-4 tablespoons milk or lemon juice, and 0.5 teaspoon vanilla extract, adjusting milk until you reach the desired consistency.

While the fritters are still warm, either roll them in cinnamon sugar or drizzle or dip them in the vanilla glaze. Serve and enjoy warm.
