Preheat the waffle maker to medium-high heat (around setting 3) for a crispier finish.

In a large bowl, whisk together the dry ingredients: flour, baking powder, salt, and sugar until combined.

Separate the eggs, placing yolks in one medium bowl and whites in another.

Add the milk, vegetable oil, and vanilla to the egg yolks and whisk together.

Using a hand mixer, beat the egg whites starting on low speed and gradually increasing to high speed until stiff peaks form.

Pour the wet ingredients into the dry ingredients and mix until almost combined, leaving some streaks of flour visible.

Gently fold the whipped egg whites into the batter, being careful to maintain as many air bubbles as possible. Scoop, cut, and fold repeatedly until mostly combined, then gently stir to break up any remaining egg white lumps.

Place a wire rack under the waffle maker to allow steam to escape and keep waffles crispy. Scoop about 1/3 cup of batter (adjust based on your waffle maker size) into the preheated waffle maker and close the lid.
