Add 1 pound of breakfast sausage (with casings removed) to a large skillet heated over medium-high heat. Break the sausage into small pieces with a wooden spoon, allowing it to render its fat and brown evenly.

Once the sausage is cooked through, reduce heat to medium-low and sprinkle 1/4 cup of flour evenly over the meat. Stir for about 1 minute until the flour is fully absorbed by the sausage fat, creating a roux.

Gradually pour in 3 cups of milk while stirring constantly to prevent lumps from forming. Scrape up any flavorful browned bits stuck to the bottom of the pan and incorporate them into the gravy.

Increase heat to medium-high and stir constantly until the mixture comes to a simmer. Reduce heat to medium-low and continue cooking for 5–7 minutes, stirring often to prevent curdling, until the gravy reaches the desired thick consistency.

Remove from heat and season with salt to taste. Add black pepper and optional crushed red pepper if desired. Stir to blend all the seasonings together.

Immediately serve the hot gravy over warm biscuits or scrambled eggs.
