Lemon zest (optional)Adds a fresh flavor note~½ tspest.
Steps
1
Preheat the oven to 350°F (about 175°C).
2
Pour your chosen cake mix into a large bowl instead of mixing directly in the bag.
3
Make a small well in the center of the mix and add the corresponding amount of vegetable oil plus 2 room-temperature eggs.
4
Whisk the oil and eggs together briefly, then fold into the cake mix until fully combined with no dry streaks.
5
Fold in mix-ins depending on flavor: lemon zest or white chocolate chips for funfetti, chocolate chips or nuts for chocolate, and chopped freeze-dried strawberries plus white chocolate chips for strawberry.
6
Scoop about 2 tablespoons of dough per cookie, roll into balls, and place on a parchment-lined baking sheet spaced about 2 inches (5 cm) apart.
7
Optionally top with extra chocolate chips, M&M's, or a dusting of strawberry powder before baking.
8
Bake in the preheated oven at 350°F for 10 to 12 minutes, until the tops look set and slightly dry.
9
If the cookies spread unevenly, gently shape them into rounds using a round cookie cutter right after baking.
10
Let the cookies cool completely before serving; store in an airtight container for up to 5 days, or freeze for up to 2 months.
