A colorful coleslaw made with fresh vegetables and yogurt instead of the traditional mayonnaise. Brightened with lemon juice, olive oil, and wholegrain mustard for a fresh and vibrant salad.

Using a food processor with the slicing attachment, process the red and white cabbage. Control the thickness by adjusting pressure on the plunger—light pressure creates finer slices, firm pressure creates thicker ones.

Add peeled shallots and halved fennel to the processor with the slicing attachment still in place.

Switch the food processor attachment to the grater (fine rather than coarse). Process the beetroot, turnip, carrots, and radishes until finely grated.

Transfer all the sliced and grated vegetables to a large bowl.

Add yogurt in an amount sufficient to coat the vegetables. Season generously with salt and pepper.

Chop fresh herbs (bronze fennel, mint, and chervil or parsley) and add them to the mixture.

Squeeze the juice from about one and a half fresh lemons into the bowl.

Add 4 to 5 tablespoons of extra virgin olive oil and 1 tablespoon of wholegrain mustard.

Use your hands to thoroughly mix the coleslaw, turning and tossing until all vegetables are evenly coated with the dressing.

Serve the coleslaw topped with additional fresh herbs. Enjoy on its own, in sandwiches, with jacket potatoes, or alongside roasted meat.
