Steps
1
Whisk together the flour, baking powder, and salt in a bowl; set aside.
2
Beat the room-temperature butter and cream cheese together until smooth and lump-free.
3
Add the granulated sugar and beat on medium-high speed for a few minutes until light and fluffy.
4
Mix in the egg and vanilla extract, scraping down the bowl as needed.
5
Add the dry ingredients to the wet mixture, mix on low until mostly combined, then finish folding by hand with a spatula—being careful not to overmix to keep the texture tender.
6
Cover the dough and refrigerate for at least an hour (overnight is fine too).
7
Preheat the oven to 375°F (190°C) and line baking sheets with parchment paper.
8
Scoop about two-tablespoon portions of dough, roll into balls with slightly wet hands, and space them two inches apart on the baking sheets.
9
Bake one tray at a time for about 10 minutes, until the edges just turn golden.
10
Once the cookies have cooled completely, dust with powdered sugar or drizzle with a vanilla glaze, fruit glaze, or chocolate as desired.
