1
Heat oil in a pan, add the chopped onions with a little salt, and sauté on low heat until the onions turn soft and translucent.
2
Add the chopped capsicum (or other veggies like cabbage/carrot), sauté on high heat, lowering to low heat if it starts sticking.
3
Add the ginger-garlic paste and cook until the raw smell disappears.
4
Add turmeric, coriander powder, chili powder, and garam masala if available; sauté for about 2 minutes.
5
Add curry leaves and chopped green chilies (adjust quantity to taste). Mix well without adding water, stirring continuously to prevent sticking.
6
Turn off the heat, mix in the chopped coriander leaves, and let the stuffing cool aside.
7
Take sandwich bread slices and cut off the hard crusts (save them to make bread crumbs if desired).
8
Arrange the crustless bread slices unevenly stacked in a steaming plate (idli/idiyappam plate), steam on high heat for about 30 seconds to 1 minute until softened — don't over-steam or it will turn mushy.
9
Remove the softened bread one slice at a time, keeping the rest covered so they stay moist and don't dry out.
10
In a small bowl, mix the flour with water into a smooth paste — not too runny, not too thick — to use as a sealing glue.
11
Take a softened bread slice and gently roll it thinner with a rolling pin (skip this step if the bread is already thin).
12
Place a spoonful of the cooked stuffing in the center of the bread slice, then add a halved boiled egg on top.
13
Apply the flour paste around the edges of the bread, then fold and seal it to fully enclose the filling.
14
Secure the seal with a toothpick (or a clove) to prevent it from opening during frying; repeat with the remaining bread slices.
15
Heat enough oil in a wide, flat pan on medium heat. Fry the bread parcels, turning both sides until lightly golden — avoid over-frying or using low heat, which causes excess oil absorption.
16
Remove the fried puffs and drain on a paper towel; remember to remove the toothpicks before serving.
