Prepare 3 large apples by peeling, coring, and cutting into half-inch slices or chunks. Granny Smith and Honeycrisp varieties work best.

In a large bowl, whisk together 1 cup powdered sugar, 1 teaspoon baking powder, and 1/2 teaspoon sea salt, leaving some flour chunks visible.

In a separate large bowl, beat 2 room-temperature eggs until foamy.

Add 1/2 cup melted unsalted butter and mix well.

Add 3/4 cup granulated sugar and whisk until the mixture is thick and ribbony.

Add 1 tablespoon vanilla extract and 1/4 cup dark rum, and mix well.

Gently fold the dry mixture into the wet mixture until almost combined, leaving some flour chunks visible.

Reserve a handful of apple slices for topping, then gently fold the remaining apples into the batter.

Butter a 9-inch springform pan (or regular 9-inch pan) on the bottom and sides, then line with parchment paper.
