These are perfectly sweet, crunchy oat bars with a delicious blueberry filling and crumbly oat topping. An ideal grab-and-go snack or breakfast bar. The filling can be customized with any of your favorite jams or fruit combinations.

Ingredients

Preheat the oven to 350°F. Prepare an 8-inch square baking dish and line it with parchment paper.

In a large bowl, combine the dry ingredients: oats, flour, brown sugar, cinnamon, baking soda, and salt. Whisk together until well mixed, breaking up any lumps of brown sugar.

Add the melted butter and stir with a spatula until the mixture is moist, crumbly, and well combined with a buttery texture.

Reserve 1½ cups of the mixture for the topping. Press the remaining oat mixture evenly into the bottom of the prepared baking dish to form a base layer.

Bake the base for 10 minutes until fragrant.

Remove the baked base from the oven and immediately spread the blueberry jam evenly over the top, starting from the edges to ensure even coverage.

Sprinkle fresh blueberries evenly over the jam layer and gently distribute them.

Break apart the reserved oat mixture with your hands into chunky pieces and distribute over the blueberry layer, creating an uneven, textured topping.

Place the baking dish in the oven and bake for approximately 55 minutes until the top is golden brown, the filling is bubbling, and the bars smell amazing.

Allow the bars to cool to room temperature, then chill in the refrigerator for about an hour to make slicing easier.

Cut the bars into desired portion sizes (9 generous pieces are recommended) using the parchment paper markings as a guide if desired.

Store the bars in an airtight container in the refrigerator for up to a week, or wrap tightly and freeze for up to a month.
