Ingredients

Trim and discard the top and tail of the turnips. Carefully peel them, then cut into approximately 1/2-inch sticks, being careful not to slice too thin to maintain the crispy texture.

Fill a 1-liter mason jar with 1/2 tablespoon salt, 2 tsp cane sugar, and 1 1/2 cups hot water. Swirl the jar gently to dissolve the salt and sugar completely.

Add 1 clove of garlic and approximately 1/3 cup white vinegar to the jar.

Peel the beet and cut it into quarters. Slice one quarter in half, then add to the jar.

Transfer the chopped turnips into the jar, close the lid, and let it sit at room temperature for 3 to 5 days. Store in the fridge afterward to keep for several months.
