Nilla Wafers2½ cups
Pecans1¼ cups
Powdered Sugar1 cup

Dark Rum¾ cups
Corn Syrup2 tbsp

Crushed Nilla Wafers (for coating)~½ cupest.

Pulse the Nilla Wafers in a food processor until finely crushed into a powder-like consistency. Alternatively, place them in a bag and crush with a rolling pin if you don't have a processor.

Add the pecans to the processor (optionally toasted at 350°F in 3-minute intervals until fragrant). Pulse 8 to 10 times until finely chopped.

Transfer the wafer and pecan mixture to a bowl. Sift in the powdered sugar.

Sift in the cocoa powder and salt. Whisk all the dry ingredients together until well combined.

In a separate small bowl, combine the dark rum and corn syrup. (Alcohol-free option: use cold brew coffee and rum extract instead.)

Pour the rum mixture into the dry ingredients and mix with a spatula until you have a wet, sticky mixture that holds together. Adjust by adding more rum if too dry or more crushed wafers if too wet.

Using a teaspoon scoop, portion out the mixture. Gently squeeze each portion in your hands to compress it, then roll into a ball shape.

Prepare coating options such as powdered sugar, cocoa powder, and crushed wafers. Roll each rum ball in your choice of coating until evenly covered.

Place the finished rum balls in small cupcake papers or on a serving platter. Store in an airtight container for up to 2 weeks, or freeze for up to 2 months.
