Divide the ground beef into 8 equal portions and roll them into balls. Place on a plate or baking sheet, cover, and refrigerate for at least 20 minutes or up to 6 hours.

Prepare toppings by thinly slicing red onion, tomato, and arranging cheese, lettuce, and pickles. Make the burger sauce by mixing mayo, ketchup, mustard, and relish in a bowl.

Toast the burger buns cut-side down on a buttered hot pan or griddle for about 1 minute until golden. Transfer to a baking sheet.

Heat a cast iron skillet or griddle over medium-high heat. Place beef balls on the hot pan and smash them flat with a spatula. Season with salt and pepper.

Cook for 1 to 2 minutes until the edges are crispy. Flip the patties, season again with salt and pepper, and cook for another 1 to 2 minutes until cooked through.

Add cheese slices in the last 30 seconds of cooking to allow them to melt. Use one slice for double patties or two slices for singles.

Spread about 1 tablespoon of burger sauce on the toasted bun halves. Layer the cheese-topped patties, sliced onion, tomato, lettuce, and pickles. Press gently and serve immediately.
