Slice the hotdogs thinly in half lengthwise, cutting diagonally or crosswise.

Cut the pork shoulder into medium-sized cubes. Marinate the pork in soy sauce and calamansi for 15 minutes.

Heat oil in a pan and deep-fry the diced potatoes over medium heat until the outer edges begin to brown.

In the same oil, carefully fry the carrot pieces until the outer edges brown, then combine with the potatoes.

In the remaining oil from frying the vegetables, lightly sauté diced onion over medium heat for about 1 minute until it begins to soften.

Add minced garlic and sauté for about 30 seconds until it begins to brown.

Add the diced pork liver and stir-fry with the onion and garlic for about 1 minute to lightly cook the outer surface.

Add the sliced hotdogs and stir briefly for about 15 seconds.

In a separate pot, heat oil and sauté diced onion for about 1 minute over medium-high heat until fully softened.

Add minced garlic and continue stir-frying until it begins to brown.

Add the marinated pork and stir-fry over medium-high heat until the outer surface becomes light brown, stirring occasionally as the meat releases its juices. Continue until most of the liquid has evaporated.

Add tomato sauce, dried bay leaves, and beef broth (or pork stock). Stir to combine.

Bring to a simmer, then reduce heat to the lowest setting and gently simmer the pork until very tender. Add additional water or broth if the liquid evaporates too quickly.

Once the pork is tender, add the raisins and simmer for 1 to 2 minutes.

Add the sautéed pork liver and hotdogs and continue simmering for 3 to 5 minutes. Add a little water if a saucier consistency is desired.

Add the fried potatoes and carrots to the pot.

Add the green peas and continue cooking for about 2 minutes.

Season with fish sauce and ground black pepper, stirring for about 30 seconds to finish the dish.
