Kababayan muffin is a Filipino style muffin that is soft and fluffy, sweet and moist, with a yellow color that resembles the 'salakot', the traditional Filipino headgear. A staple in Filipino bakeries and a favorite snack.
Preheat the oven to 180°C (350°F). In a large bowl, sift together flour, baking powder, baking soda, salt, and sugar, then mix gently.

Add eggs, milk, oil, melted butter, and vanilla. Mix until no lumps remain; avoid overmixing. Optionally add 3 to 5 drops of yellow food coloring. Scrape the sides and bottom of the bowl.

Brush the muffin or cupcake tray with oil or melted butter. Pour about 1/4 cup of batter into each hole.

Bake in the preheated oven for 16 to 18 minutes until fully baked.
