Sift flour, salt, baking soda, and baking powder into a medium bowl. Whisk thoroughly to combine all dry ingredients, then set aside.

In a large bowl, combine eggs, vanilla extract, sugar, and melted cooled butter. Whisk for about 1 minute until well incorporated. Pour in milk and vinegar, then continue mixing until blended.

Gently add the dry ingredients to the wet mixture and fold together with minimal stirring until just combined. The batter will be thick with some small lumps remaining—this is normal. Cover with plastic wrap and let rest for 10 minutes.

Preheat a griddle over medium heat and coat generously with butter. Using an ice cream scoop, pour about 1/4 cup of batter onto the hot griddle. Cook until the bottom turns golden brown, about 2 minutes. Flip and cook the other side for about 2 minutes until cooked through. Wipe the griddle with a paper towel and recoat with butter between batches.

Serve immediately, layering the pancakes with butter between each one. Top with maple syrup, pancake syrup, or honey to taste.
