Glazed Pork Ribs

   Prepare the pork ribs by carefully removing the thin membrane on the back of the bones using a knife.

   Mix mustard with the tacos and burritos spice mix to create a paste-like marinade.

   Generously coat both sides of the ribs with the mustard-spice marinade and massage thoroughly with your hands to work the flavors in. Marinate for at least 1–2 hours, or preferably overnight in the refrigerator.

   Wrap the marinated ribs in parchment paper, then wrap the whole package with aluminum foil.

   Place the wrapped ribs in a static oven preheated to 130–140°C and bake for at least 3 hours until the meat is very tender.

   While the ribs cook, prepare the glaze by combining barbecue sauce, sugar, honey, apple cider vinegar, and the tacos and burritos spice mix in a small pot. Heat gently until all ingredients are well blended and homogeneous.

   After 3 hours, remove the ribs from the oven (keeping them on the parchment paper) and generously brush the glaze over the entire surface.

   Return the glazed ribs to the oven preheated to 180–190°C and bake for 10–15 minutes more until the glaze caramelizes and becomes glossy.

   Remove from the oven and let cool for a few moments. The ribs should be so tender they fall off the bone—you can eat them with your hands.
