Prepare the semolina, ensuring it is finely textured. Sift the semolina into a bowl.

Add oil to the semolina and begin roasting it on the stove. Continue roasting until the semolina turns light brown and becomes fragrant.

Heat water in a separate pot. When the semolina becomes golden and fragrant, pour it into the hot water. Add gradually while stirring to prevent lumps from forming.

Mix well and add sugar. Adjust sweetness according to your preference. Stir thoroughly until the sugar is completely dissolved.

Add saffron powder if using. Cover and cook on medium-low heat for about 8 to 10 minutes until the mixture becomes thick and creamy.

Separately, roast cashews and peanuts in oil until golden, then add raisins.

Once the mixture is thick and smooth, fold in the roasted nuts and raisins. Mix thoroughly.

Serve hot immediately. The kesari should be fluffy on the inside with a slightly crispy exterior.
