A crisp butter pie crust piled high with fresh strawberries. Half the berries are cooked down into a bright, jammy filling that binds the rest of the fresh strawberries together before chilling and slicing.

Ingredients

Fresh strawberriesHalf cooked down, half kept fresh~2 lbest.
Sugar~¾ cupsest.
Lemon juice~2 tbspest.
CornstarchUsed to thicken the filling~3 tbspest.
Butter pie crustPre-baked until golden~1est.

Steps

Cook half of the strawberries with sugar, lemon juice, and cornstarch until it thickens into a bright, jammy consistency.

Mix the cooked jammy filling with the remaining fresh strawberries until well coated.

Pour the strawberry mixture into the pre-baked golden pie crust and spread evenly.
