A creamy dip with the tangy flavor of dill pickles, topped with crispy fried breadcrumbs for a satisfying texture. Perfect summer appetizer to serve with chips.

mayonnaise¾ cups
sour cream¾ cups
finely chopped dill pickles¾ cups
garlic clove1
fresh chopped dill2 tbsp
fresh chopped parsley2 tbsp

panko breadcrumbs½ cup

Finely chop the scallions and fresh dill, then set aside.

Finely chop the dill pickles into small pieces.

In a bowl, combine mayonnaise, sour cream, and grated garlic.

Add the chopped pickles, scallions, dill, and parsley to the mixture. Season with salt to taste and stir until well combined.

Heat olive oil in a skillet over medium heat. Add breadcrumbs and cook for a few minutes until golden and crispy.

Allow the crispy breadcrumb topping to cool completely before topping the dip.

Garnish with additional diced pickles and fresh dill if desired.

The dip can be made in advance. Store the breadcrumb topping separately at room temperature to keep it crispy, then assemble just before serving.
