Heat a pan and add 2 tablespoons of oil. Once the oil is hot, add 1 teaspoon of mustard seeds and let them fry until fragrant.

Add a bunch of curry leaves (cut into pieces) and let them fry well in the oil.

Take 3 medium potatoes, peel them, and slice them about half an inch thick. Rinse with water one or two times and drain well.

Add the drained potato slices to the hot oil. Add a little salt and 1/4 teaspoon of turmeric powder, mixing gently to avoid breaking the potatoes.

Cover with a lid and cook on low flame for about 8 minutes. Occasionally open the lid and stir gently.

After 8 minutes, open the lid. When the potatoes are about 90% cooked, add 2 teaspoons of coriander powder, 1.5 teaspoons of chili powder, and 1 teaspoon of garam masala. Mix well.

After adding the spices, continue cooking on low flame for about 5 minutes, stirring occasionally, until the potatoes are fully cooked and the spices are evenly distributed.

Check the seasoning and adjust salt or turmeric powder if needed. Finally, add fresh coriander leaves, mix well, and turn off the heat.
