A perfect appetizer that combines garlic bread and bruschetta. Fresh tomato and herb topping is spread over garlic-infused olive oil brushed ciabatta bread, topped with melted cheese, and baked until golden and bubbly.

Prepare the tomato topping: Dice the tomatoes and toss with garlic, salt, oregano, fresh basil, and olive oil. Let it marinate at room temperature for about 20 minutes.

Peel and very finely slice the garlic. In a small skillet, heat 1/4 cup olive oil with a pinch of hot pepper flakes and the sliced garlic over medium heat until the garlic becomes lightly golden and fragrant.

Slice the ciabatta loaf open lengthwise. Spoon and spread the garlic-infused olive oil mixture over both cut sides of the bread.

Layer thinly sliced mozzarella over both cut sides of the garlic-oiled bread. Sprinkle Parmesan cheese on top.

Bake in a 375°F oven for about 25 minutes until the bread is crusty on the bottom and the cheese is golden brown and bubbly.

Remove the baked bread from the oven and top with the marinated tomato mixture. Drizzle with balsamic vinegar or glaze if desired, and finish with fresh basil.
