In a large bowl, combine flour with Herbes de Provence and a pinch of fleur de sel. Add cold butter cubes and gently rub together with your fingertips until the mixture resembles breadcrumbs with visible butter flakes scattered throughout.

Gradually add cold water (about 50–75 ml), mixing until a dough just comes together. Shape into a disc and wrap in plastic wrap. Refrigerate while preparing the filling.

Peel and thinly slice the onions. Heat olive oil in a skillet and add the onions. Sauté for 15–20 minutes over medium heat, stirring occasionally, until soft and lightly caramelized.

Once the onions have cooled slightly, roll out the pastry disc and press it into a tart pan, trimming the edges neatly.

Spread a thin layer of mustard over the pastry base and distribute the caramelized onions evenly on top.

In a small bowl, whisk together cream, egg, fleur de sel, and black pepper. Pour the mixture gently over the onions, using a moderate amount to keep the onions as the star ingredient.

Bake in a preheated 180°C oven for 40 minutes until golden brown. Allow to cool slightly before slicing. Serve warm or at room temperature.
