Heat oil in a large pot and add the washed chicken pieces to brown them, seasoning with salt.

While the chicken is browning, prepare the vegetables: peel and slice carrots into rounds, peel and cut potatoes into large cubes, slice onion, and cut peppers into strips.

Add the güero peppers to the browning chicken and let them cook together for a while.

Once the chicken is browned, add the potatoes and carrots to cook together.

Add garlic, onion, and serrano peppers, letting them cook briefly so the onion and peppers soften before adding the chili.

Pour the fresh orange juice into the pot, add bay leaves and water—using twice as much water as orange juice.

Add more salt to taste and bring the mixture to a boil, allowing the chicken and vegetables to cook until the chicken is fully cooked and vegetables are tender.
