Pour 2 cups of water and 2 cups of milk into a pot and bring to a gentle simmer.

Prepare the piloncillo: if it is too hard to chop, place it on a microwave-safe plate and heat in 10-second bursts for about 30-40 seconds total to soften it with its natural moisture, then carefully remove and chop.

Add the chopped piloncillo and 1 teaspoon of ground Mexican cinnamon to the simmering milk and water mixture, stirring to dissolve the sugar and distribute the spice evenly.

When the mixture returns to a simmer, sprinkle in ½ cup of masa harina while whisking constantly to ensure it incorporates smoothly without lumps.

Continue heating and stirring until the mixture reaches a full rolling simmer. The beverage will thicken slightly to a pleasant consistency—not as thick as a sauce, but noticeably thicker than plain milk.

Once the mixture reaches a full rolling boil, remove from heat and add about 1 teaspoon (or more to taste) of Mexican vanilla extract, stirring gently to combine.
