Greek Chicken Stew with French Fries

Season the chicken lightly with salt and black pepper.

Heat olive oil in a pot over medium-high heat. Brown the chicken in batches, about 4 minutes per side, until it releases easily from the pan and has color. Transfer to a plate.

Turn off the heat and add the chopped onion. After about 1 minute, turn the heat back to medium and cook the onion for about 8 minutes until it softens and turns golden.

Add the minced garlic and cook for a few seconds until fragrant.

Return the browned chicken to the pot with the crushed tomatoes, salt, black pepper, cumin powder, bay leaf, dried oregano, and red pepper flakes. Stir well to combine.

Add about 1 cup of water (rinse the tomato can and add that water too), stir well, and bring to a boil over high heat.

Reduce heat to medium, cover the pot, and simmer for about 45 minutes. Stir the chicken often to prevent sticking and burning. The stew is ready when the chicken is fully cooked and the sauce has thickened.

Taste the stew and adjust the seasoning if needed. Add a little hot water to thin the sauce if desired.

Garnish with freshly chopped parsley.

Peel and cut the potatoes into wedges or fries. Soak them in cold water for at least 1 hour (or overnight if possible) to remove starch and keep them crispy. You can skip this step if in a hurry.

Heat the olive oil in a pot or skillet to 360–375°F (180–190°C).

Fry the potatoes in batches for about 6–8 minutes each until golden and crispy. Pat them dry before frying to prevent oil splatter.

Carefully lift the fries out of the oil, drain excess oil, and transfer to a paper towel–lined plate. Season generously with salt and black pepper while hot.

Serve the chicken stew with the French fries alongside. You can eat it as is, serve it over pasta or rice, with bread, and a green salad on the side.
