Place the lamb shanks with bones in a large pot and add 2 liters of water.

Bring the water to a boil over high heat.

Skim off and discard the foam that rises to the surface using a large spoon.

Add the salt and all the aromatics and spices: the quartered onions, celery chunks, cinnamon sticks, bay leaves, sliced garlic, cardamom pods, and whole cloves.

Cover the pot, reduce heat to low, and simmer for 3 hours until the meat is very tender and easily separates from the bones.

Transfer the cooked meat and bones to a plate and strain the broth through a sieve.

Use the meat and broth in your desired recipes, adjusting the quantities of meat and liquid according to the specific dish requirements.
