   Pour the lamb broth and water into a large pot and add all the diced vegetables. Bring to a boil over high heat, then reduce to low heat and simmer for about 20 minutes until the vegetables are tender.

   Toast the vermicelli pasta in 2 tbsp of oil in a pan until golden, then drain the oil and set aside.

   Add the washed rice and toasted vermicelli to the soup. Return to a boil over high heat, then reduce to low and add salt, 7-spice blend, cinnamon, nutmeg, and black pepper. Stir well and simmer for 10–15 minutes until the rice is cooked through.

   Stir in the cooked lamb meat that has been removed from the bones. Turn off the heat and generously sprinkle with fresh chopped parsley. Let rest for about 10 minutes before serving.
