Pour the soaked green gram into a grinder and pulse until coarsely ground, leaving some texture.

Transfer the ground green gram to a bowl and add whole wheat flour, semolina, asafoetida, onion seeds, carom seeds, baking soda, fennel seeds, cumin seeds, black pepper powder, turmeric powder, salt, dried fenugreek leaves, and melted ghee. Mix everything together thoroughly.

Add the water gradually and knead into a soft dough, then incorporate the oil and continue kneading until smooth and supple.

Oil your work surface lightly, take a portion of dough, and roll it into a semi-thick disk. Pierce the surface all over with a fork or docking tool, then cut into small rounds using a cookie cutter or similar shape.
