coriander seeds2 tsp

Remove skin and bones from the chicken, rinse well and drain thoroughly. Cut the meat into long strips about 0.5 to 1 cm thick.

In a mortar and pestle, grind together the minced garlic, pepper, and coriander seeds until fine. Add sugar, annatto oil, oyster sauce, and soy sauce; mix well.

Combine the marinade with the chicken and mix well. Refrigerate for about 30 minutes.

Thread the marinated chicken onto bamboo or metal skewers, ensuring the meat is well coated with marinade.

Place the chicken skewers on a grilling pan or cook in an air fryer. Once the chicken is cooked, turn it over and brush with another layer of marinade to give it a golden, glossy appearance.

Grill until golden brown and cooked through. Serve with chili sauce and fresh salad on the side.
