Gröstl is a rustic mountain dish from South Tyrol and Tyrol, traditionally born as a way to use up boiled potatoes from the previous day. Potatoes and onions are pan-fried until golden and crispy, enriched with aromatic South Tyrolean smoked ham (speck), then seasoned with cumin and marjoram. Each portion is topped with a sunny-side-up egg with a runny yolk that binds all the flavours together. Once a humble farmer's everyday meal, it has become a signature specialty served in mountain huts and traditional restaurants.
