Bring water to a boil in a small pot, add a pinch of salt, gently place eggs into the water, and cook for 9 minutes until semi-firm.

Immediately remove cooked eggs and submerge in ice water for about 10 minutes to cool and ease shell removal.

Soften butter slightly by heating and spread it on the inside of each bread slice to prevent moisture absorption.

Carefully peel the eggs and cut them in half to separate the whites from the yolks.

Chop the egg whites to your preferred size and place yolks in a bowl.

Mash the yolks and mix with sugar and white dashi.

Add mayonnaise and thoroughly mix for about 1 minute until emulsified and fluffy.

Gently fold in the chopped egg whites to complete the filling.

Lay plastic wrap on a cutting board, place a bread slice, layer 2 ham slices, and spread half of the egg mixture.

Top with another bread slice, press gently, and wrap tightly with plastic wrap.

Let rest for 10 minutes to allow flavors to meld, and repeat the process for the second sandwich.

Cut the sandwich in half through the plastic wrap, carefully remove the wrap, and serve.
