A light and fluffy steamed cake infused with delicate cherry blossom flavor. Made easily with pancake mix and a frying pan, the plain batter is swirled with a pink cherry blossom-colored batter to create a beautiful marbled effect. Perfect for spring snacking and tea time.

Sakura powder2/3 tsp

Crack the egg into a bowl and beat until dissolved. Add sugar immediately and mix quickly to prevent the sugar from absorbing moisture and creating a grainy texture.

Add vegetable oil and mix thoroughly until well emulsified, ensuring the oil and liquid don't separate.

Pour in the milk and mix well until fully combined.

Sift the pancake mix and add it to the batter. Mix gently at first to prevent flour from scattering, then stir thoroughly until completely smooth. This is your plain base batter.

Transfer 2 to 3 tablespoons of the base batter into a separate container, add the sakura powder, and mix well until a uniform pink color is achieved. If the batter is too thick, you may add a small amount of water to adjust the consistency.

Pour the plain base batter into prepared baking cups, filling them to about 8 to 9 tenths full.

Using a spoon, distribute the pink sakura batter over the top of each cup in portions. Use a toothpick to gently swirl through the surface and part of the interior to create a marbled effect. Be careful not to overmix or the pattern will lose its definition.

Add approximately 1 cm of water to the bottom of a frying pan and heat until boiling. Once boiling, turn off the heat and carefully place the prepared cups into the pan (be cautious of the hot steam).

Turn the heat back on to medium-low and let the water come back to a gentle boil. Cover with a lid and steam for 10 minutes on medium-low heat. If the water level drops during steaming, add more water to prevent the pan from drying out.

After 10 minutes, turn off the heat and open the lid. Carefully remove the hot cups (avoid burns) and allow them to cool slightly before turning out of the molds. Serve and enjoy.
