Ingredients
Soya chunks
~1½ cups

Salt
~½ tsp

Paneer (grated)

Ginger garlic paste

Green chili

Spice powder blend

Black salt
~¼ tsp

Kasuri methi (dried fenugreek leaves)

Fresh coriander
~¼ cups

Roasted chickpea flour
~1/3 cups

Rice flour
~2 tbsp
est.
Oil for cooking
~2-3 tbsp

Steps

Boil soya chunks with salt in water for about 5 minutes until they become soft and the raw smell is eliminated.

Drain the soya chunks, rinse with cold water, and squeeze out all excess moisture.

Transfer the boiled soya to a mixer jar and pulse grind to a coarse texture.

Transfer the ground soya to a large plate and add grated paneer, ginger garlic paste, green chili, and onion.

Add spice powder, black salt, regular salt, kasuri methi, and fresh coriander, and mix well.

Use your hands to squeeze and mix everything thoroughly so all spices combine evenly.

Add roasted chickpea flour and a small amount of rice flour as binder, and mix until the consistency resembles dough.

Oil your hands and shape the mixture into tikki-shaped patties or your preferred shape.

Shallow fry or pan fry in hot oil over medium heat until golden and crispy on both sides, ensuring the interior cooks through.

Flip and fry until both sides are golden and crispy, then drain excess oil before serving.
