Place the butter in the freezer until it's completely solid.

In a large bowl, whisk together the flour, sugar, and salt.

Grate the frozen butter directly into the flour mixture, tossing as you go to coat the shreds and prevent clumping, until all the butter is incorporated.

Drizzle in the cold water while mixing, starting with 6 tablespoons and adding more a tablespoon at a time as needed, until the dough forms a shaggy mass that holds together when squeezed.

Gently knead the dough in the bowl by pressing with the palm of your hand, being careful not to overwork it so the butter stays in visible pieces.

Turn the dough onto the counter, shape it into a square about 2 to 2.5 cm thick, wrap tightly in plastic, and chill for 1 hour.

Unwrap the chilled dough, lightly flour your work surface, and roll it out into a rectangle about half an inch thick.

Fold the dough into thirds like folding a letter — this is your first roll-and-fold.

Rotate the dough 90 degrees and repeat the roll-and-fold process, for a total of four rounds, rotating 90 degrees each time before rolling.

After the four rounds, do one final tri-fold, wrap tightly in plastic, and chill for at least 2 hours (up to 2 days), or freeze for up to 2 months.

Before baking, roll the chilled dough out to about 1/8 inch thick and cut into your desired shapes. For freezing, roll it between sheets of parchment, fold into thirds, and wrap.

Preheat your oven according to your specific recipe (about 400°F/200°C for plain puff pastry, 375°F/190°C for Danish), brush with egg wash for shine and color, then bake.
