Honey Garlic Salmon with Jasmine Rice and Greens

Rinse the jasmine rice under cold water until clear. Add to a pot with cold water and a pinch of salt. Bring to a boil over high heat, then cover, reduce to low, and cook for 12 minutes undisturbed. Turn off heat and let steam, covered, for 4 minutes. Fluff gently with a fork before serving.

Make the glaze by whisking together low-sodium soy sauce, honey, rice vinegar, sesame oil, grated garlic, grated ginger, and chilli flakes in a bowl. Add ground white pepper (skip salt since soy sauce is already salty). Whisk until honey dissolves and the mixture is smooth and combined.

Trim and halve the broccolini. Blanch in generously salted boiling water for 2 minutes until bright green and tender but still al dente. Drain and shock in ice-cold water to stop cooking, then drain completely.

Pat salmon fillets completely dry with paper towels. Generously salt the skin side. Heat a large pan over medium-high heat, add about 1 tablespoon of oil. When shimmering, add salmon skin-side down and press gently for about 20 seconds to ensure skin contact with the pan.

Let the salmon sear undisturbed for 4–5 minutes until the skin is golden and crispy. Turn heat to medium, flip the fillet, and cook for another 2 minutes. Season the flesh side lightly with salt. Adjust heat and time to your preferred doneness.

Pour the prepared glaze over the salmon. Continuously baste with a spoon for about 2 minutes until the glaze thickens and evenly coats the fish.

Remove salmon to a clean plate to rest. In the same pan, add the drained broccolini, 1 teaspoon soy sauce, 1 teaspoon sesame seeds, and white pepper. Sauté for 2 minutes until fully coated in any remaining glaze, then turn off heat.

To serve: place rice on a bowl or plate first, arrange broccolini at an angle on top, then add the salmon. Drizzle with any resting juices from the salmon, garnish with sesame seeds and sliced spring onion, and serve with lemon or lime wedges on the side.
